Lijia bamboo tube rice is a traditional delicacy of the Li people in Hainan. Rice and seasonings are baked in fresh bamboo tubes. In the past, it was mostly made outdoors in mountainous areas or grilled with charcoal at home. Now, chefs have improved on the traditional basis and put it on the banquet table.
