How to use the oven The MB 91 oven combines in one appliance the advantages of a traditional convection oven and a more modern oven with fan mode.
This is a versatile device that allows you to choose from 7 different cooking methods easily and safely.
These multifunctional features of the oven can be realized via selector button B and temperature control button C on the control panel.
Oven light When the selection button is placed in any position except ● , the oven light turns on.
NOTE: For the oven light to be on when no heating element is in use, selector button B must be placed and temperature control button C must be set to 0.
Note: When using the appliance for the first time, it is recommended to set the temperature to the highest setting and continue heating for half an hour without food in the oven, then open the oven door and ventilate the room.
Odors often develop during initial use of an oven due to the heat evaporating of substances applied to protect the oven during storage.
Convection mode Temperature control button C position: between 500C and 2500C.
In this setting, the top and bottom heating elements work.
This is a traditional and very good ideal oven type.
It has good heat distribution and low energy consumption.
Convection ovens are not suitable for cooking a combination of several dishes (such as cabbage wrapped around ribs, Spanish-style cod, Ancona-style dried fish, and tender veal fillets cooked with rice).
But when cooking veal or beef, as well as steamed meats, stews, ragout, ham, game, etc., they need to be cooked slowly, oiled and stocked to achieve excellent results.
It remains the best cooker for baking cakes and fruits and for cooking covered dishes.
When cooking in a convection oven, only one drip pan or rack can be used at a time, and the heat is not distributed evenly.
By using grills of different heights, you can balance the heat between the upper and lower parts of the oven, and choose the height of the grill based on how much heat the top of the dish needs.
Bottom heating mode Temperature control button C position: between 500C and 2500C.
In this position, the oven light and bottom heating element operate.
This position is recommended when the food has been cooked for a while on the surface but is still soft on the inside.
When in this mode, the thermostat is set to the highest temperature and cannot be adjusted.
Upper heating mode temperature control button C position: between 500C and 2500C.
In this position, the oven light and upper heating element operate.
This position is recommended for foods that have been cooking for a while on the inside but are still soft on the surface.
Grilling mode Note: Do not move the temperature control button C position above 2000C.
Keep the oven door closed during cooking.
All grill components and fans work.
In this setting, the top central heating element operates.
Very high temperatures directed at the grill can brown the surface of meat; it can also brown food soaked in juices to keep it tender.
This mode is most suitable for dishes that require high temperature on the surface, such as steaks, beef strips, ribs, slices of meat and meat patties.
Ventilation grilling mode Note: Do not move the temperature control button C position above 2000C.
Keep the oven door closed during cooking.
In this setting, the top central heating element and fan work.
This combined feature forces air to circulate throughout the oven, improving the effectiveness of indirect heat radiation from the heating element.
This allows heat to penetrate into the food and prevents the surface of the food from burning.
Baking mode Temperature control button C position: between 500C and 2500C.
In this position, the bottom heating element and fan operate.
This mode is ideal for baking and cooking more delicate foods.
Note that this mode takes longer to reach high temperatures.
If very high temperatures are required, convection mode is recommended.
Ventilation mode Temperature control button C position: between 500C and 2500C.
In this setting, the individual heating elements and fans are working.
Because the heat is stable and evenly distributed in the oven, the hot air cooperates with the cooking, and the surface of the food browns evenly.
In this mode, various dishes can be cooked at the same time and they will be cooked at the same temperature.
Up to two grills can be used at the same time, please follow the instructions in the section "Cooking with more than one grill".
The multiple cooking modes are ideal for dishes that develop a charred crust on the outside, or where extended cooking times are a consideration.
In addition, because the heat is distributed very evenly, food can be baked at low temperatures, which is suitable for foods that require less loss of juice and tender meat, and that do not lose weight during baking.
This mode is also particularly suitable for cooking fish, in which a small amount of sauce can be added, so that the dishes are full of color and flavor.
Desserts: Multiple cooking modes also allow for perfect baking of yeast pastries.
