Steamed pork ribs
1. Soak the ribs in water to remove the blood;
2. Peel the potatoes and cut into small pieces;
3. Add ginger slices and cooking wine to the pork ribs to remove the fishy smell;
4. Add light soy sauce and a tablespoon of Pixian Douban, and stir evenly.
5. Pour some homemade rice noodles, mix well with a spoon, so that each rib is coated with rice noodles, and marinate for 10-15 minutes.
6. Cut the potatoes into small pieces and sprinkle with a little salt to marinate them;
7. Put the potatoes at the bottom of the bowl first; then put the ribs evenly on top;
8. Steam in a steamer for 60-90 minutes until the ribs are soft and tender. Remove from the pot and place on a plate.
Dry-fried hairtail
1. Wash the hairtail, remove the head and tail and remove the internal organs;
2. Cut it into long strips of even length and add green onions. Add ginger, garlic, cooking wine, light soy sauce, salt, sprinkle with a little pepper and Sichuan peppercorns, stir well and marinate for 25-30 minutes;
3. Coat the surface of the marinated hairtail with a thin layer of flour;
4. Heat the pot, pour in the cooking oil, and when the oil temperature is 60 to 70% hot, add the hairtail;
5. Fry the hairtail over low heat until both sides are golden. Just take out the plate.
Baked Pumpkin with Egg Yolk
1. Wash the pumpkin and remove the seeds;
2. Cut it into strips, then stir in the flour;
