During the five days of the Dragon Boat Festival, pancakes have become the highlight of every household.
From the first to the fifth day of the Lunar New Year, the time for frying pancakes is determined by oneself, but the process of making pancakes cannot be omitted. Housewives go to major markets to find ingredients for making pancakes.
The first step in making pancakes is to make the dough. To make the dough thin, smooth and delicious, kneading is the key.
Add water to the flour, then add an appropriate amount of starch according to the flour, beat in the eggs and mix evenly.
After the noodles are mixed, spread out the dough.
There are three key points in spreading the dough: first, the fire should not be too strong, second, there should not be too much oil, and third, the dough should be turned over quickly, otherwise the dough will be stuck in the pot.
When scooping out noodles, it is best to pour one spoonful evenly into the pot. Depending on the degree of steaming and baking of the dough, turn off the heat first and then spread out one piece.
After the dough is fried, wash the prepared ingredients and then fry the dough filling.
Seafood is indispensable for the filling of noodle pancakes, such as oysters, razor clams, shrimps, crab meat, etc. Of course, pork, cabbage, mung bean sprouts, and dried bamboo shoots are also indispensable. For a more beautiful color, you can also add an appropriate amount of shredded carrots.
When stir-frying the stuffing, seafood should not be stir-fried with the diced meat, because seafood is easy to cook, and pork takes a little longer. Drain the water after stir-frying the cabbage and mung bean sprouts, so that the bread will not crack when wrapped.
When eating pancakes, you can decide how much stuffing to put on them. This is an alternative buffet for the Dragon Boat Festival on the island.
When eating noodles, it is paired with light vegetables or clam soup, and the whole family can sit together and have a good time.
As time goes by, some ancient customs slowly disappear from our lives.
It is said that in the early days of Pingtan, there was also the custom of hanging sachets during the Dragon Boat Festival, but now it is almost rare.
In the 1940s and 1950s, dragon boat racing activities were often held in Tancheng Port of Pingtan. After the 1960s, the Zhuyu Port was blocked, and the custom of dragon boat racing disappeared.
However, the custom of eating noodles and giving gifts to the father-in-law's family on the Dragon Boat Festival, commonly known as "Section", is still well preserved and passed down.
