On holidays, or when I am greedy at ordinary times, I like to fry crispy meat at home, buy a piece of tenderloin, fry it and sprinkle some seasoning. The children like it very much.
Many people, like me, like to fry at home, but they also hear many complaints. Why is my fried crispy meat not crisp and a little greasy?
In fact, the most important thing for crispy meat to be delicious is the preparation of batter. If this step is not done correctly, no matter how fried, it will not produce a crisp taste. So do you want to put eggs when frying? Today, the chef will teach you the skills of paste mixing, and the fried crispy meat will be crisp but not greasy.
Preparation materials: tenderloin, ginger, raw flour, flour, eggs, beer, pepper powder, salt, pepper, oyster sauce, salt and pepper, edible oil.
1 First of all, let's prepare a piece of tenderloin, because children don't like fat meat, so we use tenderloin, but if we want to fry it crisper and taste better, we still need to mix some fat meat.
After washing, we cut it into strips and put it in a bowl. Add ginger slices, beer, salt, oyster sauce, pepper and pepper powder and marinate for a while.
3. Marinate for about 20 minutes. After that, we will take out the ginger slices.
Next, we are going to stir the paste. This is the most critical step of 1, which determines whether the crisp meat is crisp or not. Add 2 eggs, pepper powder, salt, proper amount of flour and raw flour, and the ratio of them is 1: 1, and master thoroughly. For example, my 300g pork here uses 40g flour and 40g raw flour, which is just right.
5. You can get ready to fry after grabbing it evenly. Pour a certain amount of cooking oil into the pot and heat it to 60%. Put the tenderloin in and stir it with a colander to prevent it from sticking. After frying for 5 or 6 minutes, you can see that the crispy meat is slightly yellow, so you should take it out first.
6. After that, continue to raise the oil temperature, then add the crispy meat, fry for 1 min, and then take out the oil. Finally, sprinkle a proper amount of salt and pepper on the surface, and it tastes crisp. The meat inside is so tender that people can't put it down.
Precautions:
