How to make authentic Hakka dishes like abacus

Abacus is a famous traditional snack in Dabu County, Guangdong Province, and is a Hakka dish. It is made by kneading cooked taro and flour into abacus-like shapes. The abacus is round and round, with a smooth texture. Add minced meat, mushrooms and other favorite vegetables to stir-fry, and can be used as a dish. As a staple food, it is very delicious. It is a delicacy made of taro, tapioca starch, coriander, chives, shrimp, mushrooms, fish sauce, light soy sauce, white pepper, mushrooms and garlic.

Method

1. Cook and peel the taro, mash it into a puree with a fork, add tapioca starch according to 1/2 of the weight, then add a little boiling water and knead into a ball. If your hands are sticky, use a small amount of cornstarch as hand powder during handling.

2. Take off a piece, about 7g, and roll it into a smooth ball. Pinch it with your thumb and index finger to make an abacus.

3. Add boiling water and cook.

4. Cook until it floats on the water. Pick it up and quickly put it into cold water and let cool. Abacus is best cooked and eaten fresh.

5. Add oil to the pot and sauté the minced garlic mushrooms and shrimp until fragrant. Add the water used to soak the mushrooms. Season with fish sauce, soy sauce and white pepper. Add the abacus and stir-fry quickly. Add chopped coriander and green onions before serving. Just break it into pieces.
