Ingredients for homemade five-spice salted eggs (eggs, duck eggs, goose eggs): fresh eggs, duck eggs, or goose eggs (I used eggs and added two goose eggs), salt, pepper, fennel (star anise), bay leaves
, Cinnamon method: 1. Wash the eggs with clean water and dry them. Also wash and dry the jar for pickling eggs.
2. Carefully put the eggs into the jar one by one. Note that the eggs and the inside of the jar must be absolutely dry, otherwise hair will grow.
3. Put water in the pot. The amount of water should be about 2/3 of the jar's capacity. Turn on the heat and add peppercorns, fennel (star anise), bay leaves, cinnamon, and salt. The amount of salt is controlled like this: non-stop.
Add the salt, stir to dissolve it, add it again, and dissolve it until the salt no longer dissolves, which means that the salt water is saturated, and that's it.
Cook for a short while to release the flavor of the aniseed.
4. Cool the salt water thoroughly, pour it into the jar with the eggs, cover the jar, and seal it better.

It's that simple. It'll be ready after 20 days. You can eat it and cook it as you please. It tastes great. The egg yolk will be oily. It's a green food. Try it now.
Also, after the eggs are eaten, the salt water can be reused, but it must be boiled again and allowed to cool. If water is added, salt must also be added.
