2. Preheat the cast iron pan until there is a little smoke, about 3 and a half minutes. Generally, it is ok not to touch the pot, but be careful not to preheat for too long.

If there is a cast iron pot cover that can be pressed on the steak, the steak will have a more obvious inscription. It doesn't matter without a lid.
