To sear the balls into a round shape, an iron pot with a rounded bottom is needed, the "takoyaki" noodle pan. When frying, you use a skewer to quickly turn the batter into the puddle, and after turning several times, the balls become round. The "takoyaki" noodle pan is usually made of cast iron, and the pan used in stores is integrated with the gas stove, but there are also small home-use pans sold in the market, which are placed directly on the gas when in use.
It is said that takoyaki noodles were first made by Ruyoshi Endo, the founder of Aizuya, a takoyaki noodle store in Osaka. At first, Ruyoshi Endo fried meat and konjac in a blended wheat flour batter and sold them at food stalls. Later, in 1935, Ruyoshi Endo began to use octopus as an ingredient and flavored the batter, and the "takoyaki" noodles became very popular. Soon, "takoyaki" noodles were popularized from Osaka to all over Japan.
There is a 160-meter-long shopping street called "Sennichimae Kikuyasuji Shotengai" in Sennichimae, Osaka, which specializes in cooking tools and kitchen appliances. At one of these stores, Yamashita Kinzoku, about 1,500 home-use takoyaki frying pans are sold every year. It is said that this type of home-use takoyaki frying pan was introduced in 1963 and became popular after 1975. It is said that every household in Osaka has a takoyaki frying pan.
People can eat or buy takoyaki noodles at specialty stores, but at home they can mix them according to their own tastes and enjoy "do-it-yourself" cooking.

How to do it
1. Cut the octopus into about 1cm length.
2. Stir in the octopus powder, water and egg.
3. Turn on the takoyaki hot plate, put the oil and batter into the hemispherical shape on both sides.
4. Put the octopus meat, tempura batter and onion into the batter, and then close the two sides of the hot plate to make it into a ball shape.
5. After cooking, you can add sauce, mayonnaise or seaweed as you like.
