1 boneless chicken thigh
1 handful of noodle threads (thin)
10 large slices of ginger
Sesame oil, moderate
Japanese sake, moderate
How to Make Sesame Oil Chicken Noodle Threads ?
Place boneless chicken thighs skin side down in a pan and fry the chicken oil until the skin side is crispy, then place the chicken on a cutting board. Fry only the skinned side.
Cut the chicken thighs into bite-sized pieces
Stir-fry the ginger in the chicken fat in the wok to bring out the strong ginger flavor
Pour the cut chicken pieces into the wok and stir-fry with the ginger until the chicken is browned on all sides
Pour sake into the wok, or substitute rice wine if you don't have any. Use enough to cover about 2/3 of the chicken, as shown in the picture
Burn off the flavor of the sake. (If there's a lot of oil on the hood, use the lid of the pot to block the heat while you do this.)
Pour 15ml of sesame oil into the pot, add a little more hot water than you need to cover the chicken, and simmer over medium-low heat with the lid on.
This is the time to start cooking the noodle threads, make sure you don't cook them too early or they will be mushy. (Boiling water to cook noodles ah!)
Put a little sake and sesame oil at the bottom of the bowl
Put the cooked noodle threads into a bowl, you can use scissors to cut them a little shorter, and mix them with the sake and sesame oil at the bottom of the bowl. Pour in the simmering chicken broth and the dish is complete!
