The six major tea categories are black tea, green tea, green tea, yellow tea, dark tea and white tea.
1. Black tea
Black tea is a fully fermented tea. During the fermentation process, the polyphenols in the tea leaves are oxidized, causing the tea leaves to show red soup and reddish-brown leaves. Representative varieties of black tea include Lapsang Souchong, Jinjunmei, and Keemun black tea.
2. Green tea
Green tea is an unfermented tea that retains more natural nutrients. It is characterized by emerald green color, clear soup color and fresh taste. Famous green tea varieties include Longjing, Biluochun, Huangshan Maofeng, etc.
3. Green tea (oolong tea)
Green tea is a semi-fermented tea, between green tea and black tea. This kind of tea has both the fragrance of green tea and the mellowness of black tea, with a rich floral, fruity or honey aroma. Tieguanyin, Dahongpao, Dongding Oolong, etc. are well-known types of green tea.
4. Yellow tea
Yellow tea is slightly fermented tea, which has been processed through a yellowing process to make the tea leaves appear yellow. Yellow tea is characterized by its fresh aroma and mellow taste. Mengding Huangya and Junshan Yinzhen are famous yellow teas.
5. Dark tea
Dark tea is a post-fermented tea, which mainly forms a special flavor through accumulation fermentation and microbial action. Dark tea is famous for its rich aroma and mellow taste, and Pu'er tea is the most representative black tea.
6. White tea
White tea is slightly fermented tea, made from young leaves and buds, and is naturally sun-dried and dried. White tea is white in color and has a light and sweet taste. White tea such as Silver Needle Pekoe and White Pekoe are both classic white tea varieties.
