Steps are as follows
1. Weigh gypsum powder according to the quality of soybean milk. The ratio of soybean milk to gypsum powder is 50: 1.
2. Add lime powder into the bucket filled with soybean milk and stir well.
3. Stand upright 20 cm above the bucket with chopsticks and let it fall vertically. Chopsticks are not solidified if they float on the surface. If chopsticks stand upright in soybean milk, they are solidified.
Matters needing attention
1, the dosage of gypsum powder should be accurate. The tofu brain made by adding more is very thick, but it can't be made by adding less.
2. Adding gypsum must be added to hot soybean milk. Otherwise, the dissolution rate of gypsum is very slow, which leads to solidification in some places and not in others.
