Braised small yellow croaker
Three small yellow croaker materials.

Dry fried small yellow croaker
Ingredients: croaker, salt, ginger, garlic, pepper and oil.
Practice: Scrape the scales of small yellow croaker, cut open the belly and wash it, and remove the internal organs. Add salt to hemp, marinate for 20 minutes, and then drain. Pour a little oil, pepper, ginger and garlic into the pot, add small yellow croaker, fry until golden brown, and the fish will harden and dry (about 15 minutes). Turn the small yellow croaker over with a spatula and fry the other side until golden brown.
The trick is to pour less oil, which will produce oil in the process of frying fish. Don't turn the pan when the fish is not hard to dry, otherwise the skin will break and the fish will fall apart.
Steamed small yellow croaker
Ingredients: croaker, onion, ginger, wine, soy sauce and onion oil.

Dry fried small yellow croaker
Ingredients: croaker 1 kg, 2 tablespoons of cooking wine, 2 onions, Jiang Mo 1 spoon, salt 1 spoon, egg 1 piece, half a grain of starch, flour 1 piece, and proper amount of edible oil.
Remove scales, gills and internal organs from small yellow croaker, and then wash it for later use. Take a large bowl and marinate the small yellow croaker with cooking wine, onion, ginger and salt for about 20 minutes. Stir the eggs with flour and starch to make fried fish sauce. Remove the pepper, onion and ginger from the salted small yellow croaker and hang it for later use. Make oil in the pot, add small yellow croaker when it is 70% hot, fry until golden brown, and take out the oil control. Put the small yellow croaker after oil control on a plate and dip it in salt and pepper to eat.
The trick is to fry the fish with a slightly higher oil temperature, so as to fry the fish tender and tender. When frying fish, put them into the pot one by one to prevent the small yellow croaker from sticking in the oil pan. I use farm rapeseed oil. Crispy fried small yellow croaker mixed with mellow rapeseed oil is very delicious.

Stir-fried yellow croaker
Ingredients: 500g of croaker, 8g of white garlic, 5g of sweet noodle sauce, 5g of sugar, 5g of pea starch, 4g of salt, 4g of cooking wine, 25g of peanut oil and 3g of sesame oil.

Hot and sour small yellow croaker
Ingredients: salt, pepper, cooking oil, onion, ginger, garlic, pepper, star anise, cinnamon, bean paste, tomato, tofu, day lily, lotus root, potato, wine and small yellow croaker.
The practice is to wash the head and internal organs of small yellow croaker. Marinate with salt, pepper and cooking oil 15 minutes or so. Fry the salted small yellow croaker on both sides until golden, and then take it out of the pot. Add water to the pot, add chopped tomatoes to boil, add tofu, day lily, lotus root and potato chips to boil for about 10 minute, and add fried yellow croaker, wine and salt to boil.
Xiaohuanghua fish tofu soup
Ingredients: 1 yellow croaker, 1 tofu, oil, onion ginger, salt, cooking wine, chicken essence.
Practice the yellow croaker to scale and wash the internal organs, and cut the tofu to remove the beany smell. Stir-fry shallots and ginger in hot oil and yellow croaker in low heat. Put 3 bowls of water, cooking wine and tofu stew 15 minutes. Season with salt and chicken essence.
Salt and pepper small yellow croaker
Ingredients: croaker, a little salt, cooking wine, half a spoonful of baking powder, half a bowl of raw powder, onion, ginger, minced garlic, small fish, black pepper and salt.
Practice wash small yellow croaker, cook wine with a little salt, wipe it clean and marinate it for about 2 hours. Half a spoonful of baking powder+half a bowl of cornflour, mix well, dip the small yellow croaker in, fry it, and take it out to dry. This is the first time to fry it. Second frying (in fact, after the first frying, you can eat it with a small dish of black pepper and salt, but I think it is spread unevenly).
