Pea puree with sautéed fresh shrimp ?
Pour 200g of peas into a saucepan and add cold water to cover the peas,add a spoonful of salt.
Cut 1 clove of garlic in half and add one half to the pan with the peas and cook for about 5 to 10 minutes.
Because Eva used frozen peas, she cooked them on medium heat for about 10 minutes
While the peas were cooking, sprinkle the thawed shrimp with salt and pepper on both sides
Pour olive oil into a hot pan, add the remaining half of the garlic clove, add the shrimp, and sauté them on medium heat until they are browned on both sides, and the juices are reduced
Serve
Split the 50g of bacon into small cubes, and add to the pan where the shrimp have just been cooked. Pour 50g of bacon, finely diced, into the pan where the prawns have just been fried, so that the bacon is coated with the fresh flavor of the prawns. Fry the bacon over a medium heat to dry it out
Pour the cooked peas, garlic and stock into a blender, add a pinch of pepper and 4 tablespoons of milk, and blitz to make a pea puree.
Mix the bacon and a small bowl of rice (about 150g) with the pea puree with a spoon
Slowly pour the pea puree in the middle of the plate, arrange the shrimp on the side of the rice, a small amount of bacon, and a parsley leaf as a garnish around the edge.
Sprinkle Parmesan cheese over the whole plate
