The style and quality characteristics of Kweichow Moutai are "outstanding sauce flavor, elegant and delicate, full-bodied, long aftertaste and lasting fragrance in empty cups". Its special style comes from the unique traditional brewing technology formed over the years. The brewing method is combined with the agricultural production in Chishui River basin, which is influenced by the environment and produced seasonally, retaining some original traces of local life.

Liquor, English name (Baijiu), is the general name of China liquor (except fruit wine and rice wine), also known as shochu, tempting boiled rice and burning knife. China liquor is a compound flavor with esters as the main body, koji and distiller's yeast as saccharifying and fermenting agents, and starch (sugar) as raw materials, which are cooked, saccharified, fermented, distilled, aged and blended.
Strictly speaking, the blended wine made of edible alcohol and edible spices can't be regarded as liquor. Liquor is mainly concentrated in the upper reaches of the Yangtze River and the triangle of Renhuai in Guizhou, Yibin in Sichuan and Luzhou in Sichuan. It has the largest and best quality distilled liquor producing areas in the world, namely, the three famous wine huts and Luzhou in China. Its liquor industry cluster shoulders half of China liquor industry.
From 20211,the new import and export tariff of People's Republic of China (PRC) was officially implemented. Chapter 22 of the tariff code is 2208.9020, the Chinese title is China Liquor, and the corresponding English is China Liquor. From June 1 2022, the technical terms of liquor industry were officially implemented, and the main raw material of liquor must be grain.
