Methods/steps
First, remove the roots of fresh moss and wash it with clear water for later use.
Wash carrots, peel them and cut them into thin shredded carrots for later use.
Peel and wash shallots, and peel and wash ginger slices for later use.
Cut the chives in the middle and cut them into fine chives. Ginger slices were also cut into Jiang Mo.

Heat the wok and pour in proper amount of peanut oil. When the oil is heated to 70%, add chopped leek, Jiang Mo and shredded carrot and stir fry.
