How to make the oyster brand with Chaoshan traditional cuisine ?
Fresh oyster meat, soaked in ice water, bought back still fresh and tender.
Wash the oyster meat twice, wash off some of the broken shells mixed in, wash and fish out into a bowl.
Add two tablespoons of groundnut flour, do not need to add water, oyster meat itself absorbed a lot of water.
Use chopsticks to mix the groundnut flour with the oyster meat in the right direction.
We usually add white pepper, but we ran out of white pepper, so we used black pepper instead, adjusted according to personal taste, and then we added 5g of salt, stirred well and set aside.
Cut the small onion into small pieces, cut the garlic green into small slices, and chop the basil.
Add the onions to the oysters and mix well.
Heat the oil in a skillet and make sure it's hot before pouring in the oyster mixture, spread the oyster mixture flat and fry over medium-low heat.
Break in a fresh duck egg and quickly break the egg to spread it over the top of the oyster meat.
Sprinkle the garlic and basil evenly over the oysters, and when the bottom layer is almost done, flip it over and fry the other side.
