White Stripped means butter (a product of milk processing).
Soften the butter at room temperature and set aside, I put it in the fermenter at 38 degrees to soften. Beat the butter until white in color and large in volume, add vanilla extract and mix well.
Introduction
Put the sugar and water together and heat to 117 degrees. While the sugar syrup is cooking, beat the egg whites with a whisk until they have curved corners and glossy wet peaks. ps, I used frozen egg whites.
Add the boiled syrup to the whites a little at a time, whisking rapidly as you add it. Continue whisking until the whites are completely cooled and the whisk produces stiff peaks with an upright tip.
Add the meringue to the butter in small batches, and mix well with each addition before adding the next, until all are added and mixed well. ps, I used a spatula to mix, and after mixing, I realized that Mr. Freedom used a hand whisk to mix, and I guess that one is more labor-saving.
