2. Put the oil in the wok. I use the method of oiling, that is, put the meat in the wok and oil it first, so that the meat will be very soft and tender. "Hot pot cools oil" meat won't stick to the bottom. The simple way is to boil the pot very hot, and then put more oil, so that the meat will be soft. When the oil is 100% hot, pour the meat into the pot together, then use chopsticks to spread it, and then remove the meat after it turns white. The oil burns very hot because the fire at home is small, but the meat is cold. If the oil is not hot enough, the temperature in the pot will drop as soon as the meat is put in, so the fried dishes will not taste good.
3. After frying the meat, put it aside for use, put oil in the wok, add garlic until fragrant after the oil is hot, pour in shredded pork, stir-fry quickly, and add a little vinegar, so that the meat will be tender, then put bitter gourd in the wok for a while, add salt and stir-fry for a while, (finally, add chicken essence), add a thin layer of raw flour and water, and then taste it according to your own taste. Basically, the meat should not be fried hard and the bitter gourd should not be fried soft.
