2. Boiled lotus seeds are poured into high-speed blender together with water, and beaten into fine mud. If the high-speed blender at home is small, it should be beaten several times.
3. After mashing, pour it into a non-stick wok, add fine sugar at one time, and stir it over medium heat. Every time you stir it, the shovel should be close to the bottom of the wok to avoid pasting the wok. When steam comes out, stir it over the minimum fire. The amount of lotus paste stuffing made by the formula is still relatively large, so the wok should be large enough and have enough strength, and both are indispensable, otherwise it will be reduced to make it.
4. When the filling becomes a little thick, start to add corn oil, and add it in three times. After each time, add the next time. Edible oil is ok, as long as you don't mind the special taste, such as peanut oil and rapeseed oil.
5. Stir-fry until the stuffing becomes thicker and thicker. This hardness needs to be mastered by yourself, and it can't be fried too dry, because the fried lotus paste stuffing will become harder after being cooled and refrigerated, and it will be slightly harder than the bought stuffing.
6. Put the fried lotus paste stuffing into a larger plate and spread it flat, so that it can be dried faster. When it is not hot, it can be put into a bag and sealed for storage. It can be stored in cold storage for one week. No preservatives are added to the stuffing made by yourself, so it is still necessary to make moon cakes as soon as possible, and don't leave it for too long.
7. The picture shows the amount of lotus paste stuffing made of 500 grams of lotus seeds. It is fried relatively dry, with 1500 grams, so the amount is still very large. If it is not used, it can be reduced according to the formula.
