Sauerkraut cut into thin julienne strips.

Pork sliced.

Soak vermicelli in warm water to soften.

Heat the pan with oil, add a little onion and ginger chili.

Add pork.

Stir fry the oil.

Add sauerkraut.

Toss to coat.

Add star anise, water and remaining green onion and ginger and stir-fry well over high heat.

Cover and reduce heat to simmer for 15 minutes.

Add the softened vermicelli and salt and stir-fry well.

Simmer for 10 minutes with the lid on, turn off the heat and serve.
