When I was young, a few days before the Spring Festival every year, every household would prepare various fried foods, such as radish balls, crispy peanuts, crispy lotus root clips, etc. Among them, crispy lotus root sandwich is my favorite. Next, start preparing the batter for making lotus root clips. 200 grams of plain flour, 100 grams of corn starch, 2 grams of aluminum-free baking powder, a little pepper powder, 3 grams of salt, 100 grams of cooking oil, and the remaining egg yolk from the egg white for the meat filling, put them all into a large bowl middle. The starch, baking powder, and cooking oil here are the key to frying the batter until it is crispy. Do not remove any of them.
5. Then add water in small amounts and multiple times. I added about 240 ml of water at a time. Then stir into a smooth, semi-liquid batter. Set aside.
6. Peel the lotus root, wash it, cut it into thin slices, wash it several times with water and wash it thoroughly.
7. Place the meat filling on the lotus root slices, cover it with another lotus root slice, and pinch the two lotus root slices and the meat filling together. Arrange all the meat fillings and lotus root slices into lotus root clips and set aside.
8. Place the lotus root clips in the batter so that the surface of the lotus root clips is covered with batter.
9. Add oil to the pot, heat until it is 40 to 50% hot, and add the lotus root clips covered with batter. First fry the lotus root clips over medium-low heat, then turn to medium-high heat to fry the lotus root clips until crispy. There is no need to take out the lotus root clips during this period.
10. Fry the lotus root clips until the surface is golden brown. Knock it with chopsticks until the batter on the outside becomes hard and take it out.
Lotus root sandwich is most delicious when eaten hot. The skin is crispy and the filling is tender and juicy. One bite is fragrant and crispy, super delicious.
You can fry more at a time and put them in plastic bags after they are completely cool. When eating, heat it in the oven or electric baking pan and it will still be crispy. It can also be used to stew or make soup, which tastes good.
