Steps
1. Prepare the materials.
2. Pick the beans by hand until they are about the same size, and then rinse them with clean water.
3. After cleaning the pork, slice it into slices. (Or cut into strips, as you like)
4. Mince the garlic, add the sliced ??pork, add light soy sauce, white pepper, and cooking wine and marinate for about 5 minutes.
5. Add water to the pot and add a little salt after the water boils.
6. Blanch the drained beans.
7. Blanch the beans until they become darker in color and softer, then take them out.
8. Add an appropriate amount of cold water to the container, add a few drops of cooking oil, and soak the blanched beans in the cold water.
9. Heat a little oil in the pot and put the marinated pork slices in.
10. Fry until the edges of the pork turn brown, then take it out and set aside.
11. Leave remaining oil in the pot and sauté the minced garlic until fragrant.
12. Drain the water from the beans, add a little salt and continue to stir-fry.
13. Cover the pot and simmer over medium-low heat for about 2 minutes. Remember to open the lid and stir-fry evenly.
14. Add the fried pork slices and stir-fry for a while, then sprinkle with a little chicken essence and serve.
Tips
1. Blanching the beans with boiling water has two benefits: ① It can more effectively remove pesticide residues on the beans; ② It makes it easier to cook the beans.
2. Blanch the beans and then put them in cold water to retain the crispy texture of the beans.
