Newly dug bamboo shoots.

Peel off the shell.

Cut off the tender part at the end, then cut it open and cut it into four parts.

Blanch the bamboo shoots (cook for another minute or so).

Soak in the water for a few more minutes.

Pick up and drain the water.

Take it to the sun to dry.

Dry in the sunny weather for about a week, and seal it with a fresh-keeping bag. It can be used to stew meat.
