Wash the mutton and put it in the water to soak overnight to let the blood ooze out, and then change the water for 2 or 3 times in the middle.

Cut the scallions into pieces and slice the ginger. Add cool water and the soaked lamb to a pot and bring to a boil over high heat, skimming off the foam. Meanwhile, bring a casserole on the other stovetop to a boil with the appropriate amount of fresh water.
