Steps of homemade fermented soybean
1. A catty of soybeans is soaked for one night.
2. Bring the fire to a boil, turn to medium-low heat and cook for another 7 to 8 hours. Then, pick up the beans. Leave a bowl of water, give salt and put it in the refrigerator.
When the temperature of beans drops to about 40 degrees, put them in a covered jar. Put it into a fermentor at a temperature of about 45 degrees. Three days and three nights.
4. Open it and see that there is a layer of gray white on the beans, and then stir it with bamboo chopsticks. If it can be drawn into silk, it means good.
5. Add shredded ginger (because children don't like ginger, they cut it into long strips and pick it out). After mashing garlic, give it a little, not too much, give it salt, and give it some boiling water in the refrigerator, not too much. Some people like to deliver wine, but I don't. Give Chili sauce if you can eat Chili, but I didn't give it.
6. put it in a bottle, seal it, put it in the refrigerator, and take it out in a week.
