Super Simple Shiitake Mushroom Beef Sauce
Grind beef bought from the supermarket ready to go, dried shiitake mushrooms soaked a day in advance or fifteen minutes ahead of time. The first thing you need to do is to get your hands on some hot water and soak them quickly. The onions and mushrooms are broken up in a food processor and set aside.
Pour more oil, high heat, pour in the beef and ginger, stir fry until the beef brown, spatula out of the beef, the oil continues to stay in the pot.
Add the chopped mushrooms and stir-fry separately until fragrant, and serve.
Heat the oil over high heat and sauté the chopped onion, stirring for a while, then let it soften in the pan over medium heat, stirring occasionally.
Pour the beef and mushrooms into the pan, add the soy sauce, dashi and sweet noodle sauce and a little water, toss to coat, and let it simmer over medium-high heat to reduce the sauce.
As shown in the picture, when the sauce is reduced to just oil and soy sauce in the pot, test the taste, add sugar if it is salty, add salt if it is light, and adjust it to your favorite taste.
After cooling, bottle and put in the refrigerator, if the oil seal is good, probably put a week or two is no problem.
