Steps
1.Turn on the heat to low and put a 3-inch mousse ring into the pan. (The mousse ring is for easy modeling, you can skip it if you eat it at home)
2. Pour a tablespoon of oil into the mousse ring. If your pan is a bit sticky, we recommend you to put more oil in it.
3. Keeping the pan on low heat, crack the eggs into the mousse ring. When you see the egg whites bulging, turn the heat down to low.
4. One minute after the bottom of the egg white has solidified, remove the mousse ring.
5. Sprinkle a little salt and green onions on the eggs, pour two tablespoons of water, cover, turn off the fire, simmer for a minute.
