Steps
1. Wash the purple sweet potato and set aside.
2. Boil water in a pot. When the water boils, add purple sweet potatoes and start steaming them.
3. After the water boils, it will be steamed for about 20 minutes. Take it out and set aside.
4. Put 50 grams of dry flour into a bowl and set aside.
5. Boil it with boiling water. The purpose is to scald the noodles. I used the soup used to cook purple sweet potatoes.
6. Blanch it and stir evenly so that the flour becomes tough.
7. Peel the steamed purple sweet potatoes and put them into a bowl.
8. Mix it with the hot dough just now. In order to prevent the mixture from being too runny, I added two teaspoons of dry flour.
9. Stir the mixture thoroughly.
10. Take out a small ball of mixed dough and form it into round balls.
11. Continue to make the balls, and then put the balls in the crisper. Place it in the refrigerator to chill for easier shaping.
12. Take out the frozen purple sweet potato balls and set aside.
13. Wash the dried red dates and cherry tomatoes with water, chop them into pieces and set aside.
14. Boil water in a pot, put chopped red dates and cherry tomatoes into the pot and cook, add two teaspoons of rock sugar.
15. When the water boils, put the purple sweet potato balls in, cover with the lid and continue cooking.
16. When the water boils again, the dumplings will be cooked. Turn off the heat and simmer for two minutes.
