Avocados are best eaten when the skin is dark and relatively soft when pinched, and storing them with apples*** speeds up the ripening of the avocado.
Bread is best served on whole wheat or rye. The browner the better. Trust me it will definitely have more texture and layers than white bread. Toast it with a toaster for even more flavor.
Depending on the size and personal taste, use one or half of an avocado. Put it in a bowl and crush it, squeeze in a few drops of lemon juice, add cumin powder, salt and black pepper. Optionally, add chili powder/chili powder/onion powder/garlic powder. Spread on toasted toast.
Slightly drizzle olive oil in a pan and crack an egg. The secret to a tender omelette is medium-low heat, add a few drops of water to create steam, then cover the pan and simmer slowly.
Turn off the heat when you see the whites are set but the yolks are still runny, and carefully spoon them out onto avocado toast.
If you don't want to turn on the heat or don't have a pot, take a mug with a flat bottom, lightly grease it, and crack an egg into it. Heat on medium-high for 30 seconds, then 10 seconds by 10 seconds until desired state.
The eggs don't come out runny this way, but it's quick and easy, and round enough.
Sprinkle with salt and black pepper. You can add whatever seasoning you want. I also really like sriracha for added color.
If you don't have eggs or are a vegetarian, you can make pseudo scrambled eggs with northern tofu! It doesn't taste or look like real eggs at all!
Break a small piece of northern tofu with your hands
Add a tablespoon of water to the pan and sauté the scallions in water. Then add the crumbled tofu and cook. Almost three minutes hot on the line. Tofu could have been eaten raw anyway.
The seasoning powders I like to add are: curry powder, turmeric powder (for color) onion powder, garlic powder.
