1. Pot stickers

Shanghai pot stickers
Ingredients: 500g flour, 300g minced pork, refined salt, 10g white sugar, 10g MSG, rice wine, green onion and ginger juice, 75g raw oil .
Method: ① Mix flour with boiling water to form a dough, knead evenly and then roll into strips and cut into 40 pieces, roll into round dough and set aside;

④ Put the pan on high heat, add oil, put the pot stickers in the pan and fry for 5 minutes, add an appropriate amount of water, cover the pot, continue to fry for about 10 minutes, then turn the pot and fry for a few more minutes
2 , small wontons
Ingredients: commercially available wonton skins, pork (seven minutes thin), shrimps, green onions, ginger, egg whites
Seasonings: salt, chicken essence, cooking wine, pepper, Soy sauce, sesame oil
Method:
1. Chop pork and shrimp into puree, add appropriate amount of water and egg white, stir well, add salt, chicken essence, cooking wine to taste, then add chopped green onion, ginger and Mix a little sesame oil and mix well to make the filling
2. Place the commercially available wonton wrappers in stacks, roll them out thinner with a rolling pin, and wrap them with the filling
3. Take a bowl and put in an appropriate amount of raw material Smoke, chicken essence, pepper, sesame oil (sesame oil can also be used)
4. Sit water in the pot, wait for the water to boil, lower the heat to low, add the wontons, cover, and pour cold water after boiling. Wait until it boils again and then turn off the heat
5. Pour the boiling water into the soup, then take out the wontons and put them in (you can add a poached egg), and add chopped coriander when eating. (Preferably minced green garlic) Serve
