A tool for making pancakes with chopsticks
You can insert a toothpick in the middle of the disposable chopsticks and a simple pancake pusher is ready.
Steps to spread pancakes:
1. Pour all the ingredients and seasonings used to make crispy pancakes into a container, and add water in several batches. Knead into a smooth dough, cover with plastic wrap and let rest for 30 minutes.
2. While waiting, work on the pancake part. Pour the ingredients into the container, add water in batches to make a fluid batter, and let it sit for 15 minutes.
3. After the crispy dough has rested, roll it into thin slices. The thinner the better, use a knife to make a few slits on the surface.
4. Heat an appropriate amount of oil in a frying pan (outside the amount), add in the dough and fry until golden brown, then take it out and it will be crispy.
5. If you don’t have a pancake spreader at home, you can insert a toothpick into the middle of a disposable chopstick to create a simple pancake pusher.
6. When the pan is slightly hot, turn down the heat, lightly brush it with a little oil, pour in an appropriate amount of batter, and use a spatula to spread it evenly and thinly.
7. When most of the batter has solidified, crack in an egg, spread it out with a spatula, and sprinkle with chopped chives.
8. After the egg liquid has solidified, turn it over to the other side, add two freshly fried crispy pieces, and turn off the heat. Fold the pancakes on both sides toward the center, brush them with sauce and chili sauce, and stack them up to complete.
