Fresh Toon Sprouts. Take the young shoots of toon and wash them. I saved this picture from my cell phone. I took this picture last year when the toon was freshly picked. There is a toon tree in my mother-in-law's yard, so I can eat freshly picked toon buds every spring.

Blanch the washed toon sprouts in a pot of boiling water, blanch them until they change color (from red to green), then remove them from the pot, put them in cold water to cool, then drain them, and chop them into pieces and put them into a bowl. Blanching removes some of the nitrites and nitrites that are present in parsnips, making them safer to eat.

Step 3

Crack the eggs into a bowl, add a little yellow wine and salt, and whisk with chopsticks to a paste.

Step 4

Heat the oil in a frying pan, pour in the egg paste, and stir-fry until the eggs are basically ripe, then turn off the heat immediately. Stir fry for a few more moments and then you can get out of the pan. Be careful not to overcook the eggs.

Tips

While toon is rich in nutrients, it contains far more nitrites and nitrates than other vegetables.
