Gaoyou Salted Eggs: Take 7,000 grams of yellow mud and mash it, put it into a container with 7,500 grams of salt and 4,000 grams of water, and stir with a stick until it becomes a thin paste. 1,000 duck eggs, high-quality fresh eggs that have passed the inspection are put into the mud one by one, and finally the mud covers all the duck eggs, and the eggs are sealed for 25 to 40 days (short in summer and long in winter).
Home-made pickled eggs are salted salted eggs. Add 4000 grams of boiling water for every kilogram of salt, cool it and put it into the jar. Put in the selected, washed and dried fresh duck eggs. The eggs should be completely submerged in salt water, and the jar mouth should be tightly closed. Wait for 15 to 30 days (short in summer and long in winter). Serve. Boil the remaining salt water, filter it, and add a small amount of salt before using it again.
