What are some good recipes for thyme?

I have a small patch of thyme in my garden and a few sprigs in a vase/glass near my kitchen window. I thought about what dishes I put thyme in and they are dishes I make often.

I like to add thyme to stews and soups every week.

This week's potato and onion soup.

Roland's Potato Onion Soup

Diced potatoes, sautéed onions and cream sauce.

Ingredients

- 3 to 4 cups diced, peeled russet potatoes

- 1/2 softball-sized onion, diced

- 3 tablespoons butter

- 3 tablespoons flour

- One cup chicken broth

- One and one-half cups milk

- One and one-half to one-half cups heavy Cream

- 1 to 2 sprigs of fresh thyme

- 1/8 teaspoon of Tony Creole seasoning

- Salt and black pepper to taste

Peel and dice potatoes and onions.

Melt butter in a 2-quart saucepan or pot and sauté onions until soft.

Sprinkle flour over onions, stir well, and simmer over moderate heat for 3 - 5 minutes.

Add the liquid and heat to a simmer, thinning with milk if needed.

Add the potatoes, nutmeg and red pepper. Heat to boiling and simmer for 15 minutes or longer, until potatoes are tender.

Adjust the consistency of the other liquids, adding the milk and flour slurry if too thin.

Thyme goes well with roast chicken, rosemary and a bit of lemon.

Other Dishes:Thyme goes well with pork, beef, lamb and fish.

1. Plant Description
