Its bitter flavor is caused by two substances. One is melon plant-specific melon bitter leaf pigment, mainly in the form of glycosides in the melon; another substance called wild cucumber juice enzyme. If these two substances are present at the same time, the melon will appear bitter flavor. Like watermelon and pumpkin although contain bitter taste, but they do not have wild cucumber juice enzyme, so they have no bitter flavor.
