First of all, by tasting the 2019 Platinum Dragon, it can be determined that the style of modern Kinmen Kaoliang is similar to that of a large-curve, clear-scented white wine, except that the grain flavor shows up more in the nose and aftertaste due to the lack of restrictions on aroma processes and such bars.
Secondly, the 1998 Platinum Dragon, compared to the 2019 Platinum Dragon, has a grand and complex bouquet, with clear herbaceous, muddy paste grain flavors, mixed with some dusty sensations, and old stale air spread out. Personally, I feel that this difference in flavor between the old and new wines is not just brought about by long bottle aging, but perhaps the 1998 Platinum Dragon was made at a somewhat higher temperature and fermented for a longer period of time.
Then, the flavor difference between the 1998 Platinum Dragon and the 1997 "Accident" Platinum Dragon was obvious. The 1997 Platinum Dragon had a sweet peanut brittle flavor, and although the bitterness on the palate was a bit odd, the sweetness made the overall flavor seem fresh.
Finally, after nearly 30 years of bottle aging, the 1992 Red Label Daqu wine even had a bit of raw tobacco on the nose. I don't know if it was the long time or its own characteristics that made him not very open on the nose, but his taste was very surging, and after the stale scent dispersed, the mouth was full of apple juice-like tartness and sweetness, which made it unexpectedly easy to drink.
Except for the 1997 "accidental" Platinum Dragon, the other three Kinmen Kaoliang liquors can clearly feel the same lineage of style, while the unpredictable changes brought about by time have given them different temperaments. In contrast to the freshness and simplicity of the new wine, it is the depth and vicissitudes of the old wine, as well as the passion that even time can not erase, the charm of the old wine is revealed.
