Ingredients
1000g herring, 300g enoki mushroom, a little green and red pepper, onion, ginger and garlic, oil, Pixian bean paste, salt, chicken essence, cooking wine, pepper, soy sauce, sugar , appropriate amount of vinegar.
Method
1. Blanch the enoki mushrooms and rinse them with water.
2. Remove the scales from the herring, wash the internal organs and split it in half. Make a few cuts on the fish body and marinate it with cooking wine, salt and pepper for an hour.
3. Grill the marinated herring in an air fryer.
4. Heat oil in a pan and sauté shallots, ginger, garlic and Pixian bean paste.
5. Add soy sauce, sugar, vinegar, enoki mushrooms and grilled herring and simmer for 10 minutes.
6. Add salt and chicken essence to taste.
7. Add green and red peppers and serve immediately.
