How to Make Emerald Cabbage Dumplings
Ingredients ?
Flour 600g
Spinach 250g
Leek 200g
Pork 300g
Salt
Pepper 2g
Sesame oil 3g
Scallion and ginger 15g
How to make Emerald Cabbage Dumplings ?
Wash the spinach and scald it in boiling water for a minute or so, remove it from the water, cool it and cut it into pieces, put it into a cooking machine and add a small amount of water to make juice. Strain the spinach juice through a strainer, leaving no residue as long as the juice. Add the spinach juice to 300g of flour and mix, knead into a smooth dough; add water to another 300g of flour and form a white smooth dough. Wake up for about 20 minutes each.
Clean and chop the leeks, chop the pork, add pepper, onion and ginger water, sesame oil and salt, and mix well in clockwise direction.
Two-color Dumpling Skin Directions 1: Knead the dough again. Roll out the green dough into a large rectangular piece, just enough to enclose the white dough.
Place the white dough on top of the green dough. Roll up the green dough and wrap it around the white dough, cut off the excess green at the end of the roll, and pinch the ends closed.
Cut the rolled strip into equal portions.
Roll each of these into a circle.
Two-color dumpling skin recipe 2: Roll out a piece of green dumpling skin.
Scoop off a small round piece of pastry in the center of the skin.
Place a small round ball of white dough in the center of the skin, a little larger than the small green ball. Flatten the white dough and roll it out evenly so that it is sewn tightly to the green dough. The two-color dumpling skin is ready.
To wrap the dumpling, put in the traps, divide the skin into five equal parts and pinch them together.
Pinch the edges with your thumb and forefinger to form a pentagonal shape.
Gently hold the white and green interfaces of the dumpling with the tiger's mouth of your left hand, and with your right hand, pinch the five edges into the shape of a cabbage leaf
then push the five leaves in the same direction. Use a toothpick to press out the texture of each leaf.
Cut the carrots into slices and stick some dry flour on the bottom of the cabbage dumplings before placing them on top of the carrot slices.
The green cabbage dumplings are ready.
Tips
1 If you want to make steamed dumplings, use boiling water to make the dough;
2 Don't put too much ingredients in the dumplings if you make them for the first time.
