Naan, also known as "meat porridge", is a traditional dish in lanshan district, Linyi City, Shandong Province. Its main raw materials are female chicken (or beef and mutton), wheat and rice, flour, and seasonings such as onion, ginger, salt, soy sauce, pepper, monosodium glutamate, five-spice powder, sesame oil and vinegar. It has a long history, and there is a record in Shuo Yuan Zayan that "no food for seven days, no glutinous rice soup". "Book of Rites Neize" said: "Nao, take the meat of cattle and sheep, three as one, and cut it into small pieces. Combine it with rice 2 and meat 1, and fry it. " The "San" mentioned here is quite similar to that of today. During the reign of Kangxi in the Qing Dynasty, there were "San Shi" among the 16 products listed in Yizhou Zhi. According to legend, Nao was the breakfast drink of ancient Xizai people, and Tang Jin was introduced to the mainland, while Linyi Nao was introduced from the Yuan Dynasty (now Beijing). In the Ming Dynasty, the local people called this kind of meat porridge "Nao".

Before the liberation, there were eight San shops in Linyi City, among which the chicken San of Huangjia and Liujia and the beef San of Chen Yushan were the most famous. 1946, when Comrade Chen Yi was stationed in Linyi, he was a frequent visitor to Huangjiasan Shop. At present, there are dozens of San shops in Linyi city, and Linyi San Museum has been opened in Shanghai and Qingdao. Shanghai International Hotel and Jinan Nanxiao Hotel hired Linyi's naan technicians, respectively, which made the naan famous.

There are many stories, of which two are the most popular.

Story 1:

The name "San" is related to Emperor Qianlong. It is said that when Emperor Qianlong went down to the south of the Yangtze River, he wanted to taste the local famous food when he passed through the present Tancheng Wharf Town. The local officials offered this unique breakfast. When Master Qianlong tasted it, he never tasted such delicious food. He casually asked, "What is this?" The local official nodded quickly: "What is this? What is this?" Therefore, the son of heaven's casual question became its current name-San.

Story 2:

In the Eastern Jin Dynasty, a poor couple from other places fled to Linyi. Wang Xizhi, a great calligrapher at that time, saw that they were very poor and often helped them. The couple were very moved and had nothing to repay. Once, when Wang Xizhi was ill, they thought it was time to repay the debt, so they killed the only hen that laid eggs at home to make soup, and added some common Chinese herbal medicines to the soup. I wanted to cook the chicken badly, but the husband who watched the fire fell asleep and cooked it all night without thinking about soup. The next day, looking at the cooked chicken soup, my wife was very angry, but there was nothing else at home, so I had to give the cooked chicken soup to Wang Xizhi. Besides, Wang Xizhi was ill in bed, and his illness improved slightly after taking Chinese medicine, but his mouth was bitter and he had no appetite. When he looked at the chicken soup he sent, and he was embarrassed to brush others' kindness, he put it on a bowl and tasted it. Unexpectedly, after drinking it, he felt refreshed and recovered more than half. On a whim, he casually wrote down the word "Mishen", which was later called by later generations. The origin of the original food is uncertain, who can know the descendants?
