1. Choose fresh pork belly, wash it and cut it into thin slices. Dried pickles will taste better if they have more oil, so choose slightly fatter pork.
2. Dried pickles should be soaked in warm water in advance and washed repeatedly to remove the sediment mixed in when drying. No matter how delicious the food is, it will be impossible to eat it if you have sharp teeth.
3. Soak and wash the salted dried vegetables, then chop them into as small a size as possible.
4. Put the pork belly into the pot and stir-fry over medium-low heat to produce oil. The pork slices will turn slightly brown.
5. Add chopped salted vegetables, add a spoonful of vinegar, a spoonful of sugar and a spoonful of dark soy sauce, stir-fry evenly.
6. Add a bowl of water, bring to a boil over high heat and simmer over low heat for half an hour. When the meat slices and salted vegetables are fragrant, take them out of the pot and put them on a plate.
