How to make braised pig head meat?
I soaked the pig head in cold water overnight and scraped the skin with a knife. Boil a pot of water, put the pig's head in the pot, take it out after 5-6 minutes, and clean it. (My pot is small, so I cut it. If your pot is big enough, you can omit it here)
Boil a pot of water, add cooking wine, cinnamon, Sichuan peppercorns, ginger, and dried chili peppers. Cooking.
Put the oil into a pot, heat the oil over low heat and add the sugar. Don’t be anxious or over high heat? Bring to a caramel color.
Add dark soy sauce and light soy sauce. Low fire throughout.
Put the pig head meat into the pot, and dip the front and back sides evenly. At this time, the water in the cooking pot is also boiling. Put the pig head into the soup pot, and pour the soy sauce soup in the wok into the cooking pot.
When it is boiling, turn on high heat for 15 minutes. Taste the salt and add salt appropriately. Turn on low heat for 35 minutes. Make sure the pig head is immersed in the soup and make sure the soup pot is always boiling. Now you can take a break. When the time is up, turn off the heat. Let the pork head cool before cutting.

Tips
My materials are limited and I didn’t include star anise, cumin, bay leaves... You can add them.
