The second step is to deal with pig blood. After buying fresh pig blood in the vegetable market, don't cut it into small pieces. You can pour some water into the pot first, add some salt after the water is warm, and put the pig blood into hot water to start cooking for about two minutes. Take it out immediately and soak it in cold water for about 20 minutes. This is mainly to increase the lubricity of pig blood and make the coagulation of pig blood better.
The third step is to stew pig blood. Pour an appropriate amount of cooking oil into the pot. When the oil is warm, first stir-fry the ginger slices and garlic in the pot, and then stir-fry the chopped leeks in the pot for about 30 seconds. After the water is boiled, the pig blood should have been soaked. Cut the pig's blood into small pieces and put it in the pot to start stewing. When the water in the pot boils again, add some cold water. This will prevent the pig blood from sticking to the teeth, and the cooked pig will be cooked. Then boil the water in the pot, add some salt to taste, sprinkle some chopped green onion, turn off the heat and serve directly.
