1. Wash the fish scales and soak them in yellow wine and water 10 minute.
2. Put a proper amount of water in the pot and add fish scales.
3. Add ginger, star anise, cinnamon, pepper and cooking wine and bring to a boil.
4. Cook on low heat for 40 minutes to remove fish scales and impurities.
5. Pour the cooked fish scale juice into a clean container, cool it and put it in the refrigerator.
6. After the oil in the pot is hot, add ginger and garlic to stir fry, add starch, salt, sugar, medlar and spicy peanuts, bring to a boil, add chopped green onion, soy sauce, vinegar, cooking wine and pepper, and then add sesame oil and chicken essence for dipping.
7. Slice the fish scales and pour them with dipping sauce.
