1. Prepare the milk and turn off the heat when it is about to boil. (If you like to put vanilla pods like me, you can add one third of them, and if you like rich ones, you can add more. Put the seeds in the vanilla pod into the milk with a knife, and put the vanilla pod in it for cooking. When it is cooked, take out the pod shell.
2. Add sugar to the egg yolk until it turns white, and then pour in hot milk several times to stir. Some people say that they are afraid that the egg yolk is raw and unsanitary. In fact, it is slowly poured in with hot milk here (be careful not to pour it once, which will scald the egg yolk), that is, it is disinfected and cooked to 85 degrees later, so the egg yolk will not be raw. (here, the egg yolk can turn white by beating it 100 times with a manual eggbeater.)

4. Cook slowly with low fire until it is starch-like, and the spoon is covered with thick milk paste. But be careful not to have a big fire, which will easily turn into eggs. (What temperature will make an egg blossom? It is easy to make an egg blossom above 85 degrees, so remember to turn off the fire when the temperature reaches 85 degrees.) In this way, the egg milk slurry is made.
Beat the cream until it has lines, (animal cream is easy to separate oil from water, so don't beat it for a long time. Otherwise there will be particles)
6. Then mix the cream with the chilled egg milk slurry, and it is best to freeze it in the refrigerator for half an hour. This will be easy to shape in an ice cream machine.
7. Pour into the frozen ice cream machine.
8. Stir for about 25 minutes and then put it in the refrigerator for freezing.
