How to make sliced amaranth greens
Picked amaranth, remove the root, leaving only the leaves and a length of less than 3 centimeters, wash and set aside.
Then chop the amaranth into minced pieces, the smaller the better, add salt, five-spice powder, chicken essence and other seasonings (according to personal taste).
After the seasonings are added, let the amaranth sit for 15 minutes. At this point, some water dehydrated. Add the flour to this and you can stir in as much water as you like. I did not add water to mine. The amount of flour is less than for the matzo, and the addition of flour ensures that the kneading is somewhat malleable.
Spread the mixed amaranth dough on a caged cloth and put it into a steamer with water to boil, ready to steam the vegetable slices.
Boil the water and steam the amaranth slices. 20 minutes later, turn off the heat and remove. The amaranth slices with high nutritional value are done. However, it is sweet only if you let it stand until it gets cold and is eaten. Cut into slices (about 5mm thick) with a knife, mix garlic water to your taste and dip them. It's so flavorful.
