Exercise:
1. Clean the chicken wings.
2. Boil hot water and blanch the chicken wings.
3. Heat the wok, add vegetable oil, 80% heat, and add sugar.
4. Turn on medium heat and stir the sugar with chopsticks until the color turns red and bubbles.
5. Add chicken wings and stir fry until each chicken wing turns beautiful golden brown.
6. Add garlic, ginger slices, pepper and a small amount of soy sauce and continue to stir evenly.
7. Add the right amount of salt, hot water and cooking wine (never put cold water, because the heated meat will suddenly get cold, and the skin of the meat will shrink, making it difficult to cook the taste). There is enough water to drown the chicken wings. The duration of medium fire is about 15 minutes.
8. Then collect the juice by fire, subject to not drying the pot.
