Ordinary Dry Noodle Sauce
Materials:
1 tsp lard or sesame oil, 1 tsp vinegar, 1 tsp soy sauce, a pinch of monosodium glutamate (MSG), a pinch of sesame oil, and 1 tbsp chopped green onion.
How to make it:
Mix all the seasoning ingredients together well; if you are using oil noodles, sprinkle some crispy green onions to add a smooth texture to the oil noodles.
Tips:
If you have a heavier taste, you can add 1/2 tsp of sweet chili sauce for better flavor.
Foolish Dry Noodle Sauce
Ingredients:
A: 3 tbsp soy sauce, 1.5 tbsp black vinegar, 1/2 tbsp sugar, a pinch of chili powder, and a pinch of chili oil;
B: 1 tbsp lard, 2 tbsp chopped green onion, and a pinch of chopped cilantro.
How to make the sauce:
Mix ingredients A into the sauce and set aside. When using, mix the sauce with ingredient B into the noodles.
Nanmai Dry Noodle Sauce
Ingredients:
2 tbsp chili oil, 1.5 small pieces of nanmai (fermented soybean paste), 2 tbsp oyster sauce, 2 tbsp sugar, and 1 tbsp finely chopped green onion.
How to make it:
Mix all the ingredients together and mix well, and adjust the spiciness according to your preference.
Seafood Dry Noodle Sauce
Ingredients:
3 tbsp seafood sauce, 1 tbsp miso, 1 tbsp soy sauce, 1 tbsp sesame oil, 1 tbsp sugar, 1/3 cup cold water, chopped green onion.
How to make:
Mix all the ingredients and stir well so that all the ingredients are melted.
Dry Noodle Sauce with Oyster Sauce
Ingredients:
1 tsp oyster sauce, 1 tsp vinegar, 1 tsp soy sauce, 1 tbsp monosodium glutamate (MSG), 1 tbsp sesame oil, 1 tbsp chopped green onion.
How to make it:

Sesame Sauce
Ingredients:
2 tbsp minced garlic, 1/2 tsp minced chili peppers, 1/2 cup diced carrots, 2/3 cup diced onions, 1/3 cup salsa verde, 2 tbsp soy sauce, 2 tbsp wine, 5 cups water.
How to make it:
Stir-fry all ingredients in 2 tbsp oil, then add salsa and stir-fry for a few seconds, then add soy sauce, wine and water, and cook over medium-low heat for about 5 minutes. If you don't like it too spicy, you can reduce the amount of minced chili.
Shrimp and Dry Noodle Sauce
Ingredients:
2 taels of shrimp, 3 taels of shrimp peel, 2 taels of garlic, 1.2 pounds of ground pork, 6 taels of diced dried bean curd, 1 jar of sweet and sour sauce, 1/3 jar of soybean paste, 3 taels of dried radish, 1.5 cups of water.
Practice:
Mix shrimp skin and shrimp, put into a pot, with garlic popping incense, then add water, stringy meat, dried beans, diced radish and stir-fry together, and finally add the sweet and sour sauce and soybean paste and stir-fry well, add water to boil and cool for bottling.
