1. Stir-fried dried leeks
Ingredients: 100g dried leeks, 500g leeks, appropriate amount of oil, appropriate amount of salt, a little onion, 5 peppercorns, appropriate amount of light soy sauce, appropriate amount of pepper, a little Chicken essence and appropriate amount of sesame oil.
Method:
1. Cut the leeks into inch-long sections, cut the dried fragrant seeds into thin strips, and cut the onions into dices and rings in half.
2. Add Sichuan peppercorns and onions into the oil pan and sauté until fragrant.
3. Add in dried fragrant spices and stir-fry.
4. Add appropriate amount of boiled water.
5. Appropriate amount of light soy sauce.
6. Add a little chicken essence.
7. A little pepper.
8. Add leeks and stir-fry evenly.
9. Drizzle a little sesame oil to enhance the flavor.
2. Stir-fried tofu with mushrooms
Raw materials: water tofu, mushrooms, green peppers, and carrots.
Supplementary materials: green onions, ginger slices, garlic
Condiments: edible salt, sesame oil, tapioca starch, white pepper, white sugar
Method:
1. First cut the water tofu into 2 cm square pieces, remove the roots of the mushrooms and slice them, cut the carrots into diamond-shaped pieces, remove the stems and seeds of the green peppers and slice them, cut the green onions into strips, and cut the ginger slices and garlic.
2. Add cold water to the pot and bring to a boil, add 2 grams of edible salt, add water to the tofu first, soak for one minute, drain the water and pick it up.
3. Then put the mushrooms into the pot and pour water into them. Drain the water after 2 minutes and pick them up.
4. Heat another pan, add an appropriate amount of cooking oil, add onions and garlic and stir-fry until fragrant.
5. Then add water tofu and shiitake mushrooms, then pour in appropriate amount of cold water, then add 2 grams of edible salt, 1 gram of white pepper, and 1 gram of white sugar, stir-fry evenly, then turn to low heat and simmer for 2 minutes, cook until fragrant.
6. Then add carrots and green peppers and stir-fry for about 30 seconds.
7. Finally, pour in appropriate amount of corn starch to make the sauce thick.
8. Pour in appropriate amount of sesame oil before serving to bring out the flavor and brightness of the dish.
