(1) Production method 1
Step 1
When you buy fresh beans in the market, you must choose tender beans, otherwise they will not be crisp enough. (Those who have peas are too old, hehe, people who have acne represent youth, but once the beans form beans, they prove that they are old. )
Step 2
Choose a flooded container, preferably some earthenware jars specially flooded with pickles. If not, you can also find a larger glass jar. Important points to remember: the container must be cleaned and must not touch any oil. Otherwise, flooded things will easily break down.
Step 3
Clean the beans and put them in the sun for about one and a half to two hours until they are dry and soft.
Step 4
Put the sorted beans in a container and soak them in salt, pepper and garlic for about two hours (about 50g of pepper and garlic each) (salt is about five times more salty than usual). Then pour the remaining water from washing rice until the beans are completely submerged.
Step 5
Seal the container filled with beans with a lid and put the container in a cool place. Store for about 5-7 days. The container must be sealed, otherwise, the beans made from the leaking jar will stink easily. )
(2) Method 2
1, first wash the long beans and dry them. 2. Chop the dried beans. 3. Chop the garlic. 4. Put the chopped beans and minced garlic into a plastic bottle (preferably a glass bottle). I just mix it with salt in a plastic bottle filled with chocolate. Just put the amount of salt in the usual cooking. 5. Cover the lid and put it away. Under normal circumstances, beans can be eaten after two days when they turn yellow. When the weather is hot, they can be eaten for one day. If you like to eat sour, you can put them for one or two days.
Remarks:
If you want to eat sour beans quickly, you can put the container with beans in a sunny place for half a day. Then put it in a place where dew can be drenched at night for one night. You can eat it in about a day and a half.
